
KFC debuted a new sandwich called the Double Down. It has been dubbed angina on a plate and worse by many. Here is a healthier, tastier diabetic recipe Double Down that you can make at home. There are two variations of the Double Down: one with marinara sauce and mozzarella cheese, the other with an arugula salad. You can easily add a filling of your choice.
Ingredients
4 boneless, skinless chicken breasts, pounded until 1/4″ thick
1 cup flour
½ t. kosher salt
¼ t. freshly ground black pepper
2 eggs, lightly beaten
1 cup Italian bread crumbs
¼ cup grated Parmesan cheese
2 T. extra-virgin olive oil
2 T. butter
Directions
1. Combine the flour, kosher salt and black pepper on a plate. Add the eggs to another plate and combine with about 1 Tablespoon of water. Combine the bread crumbs and the parmesan on a third plate.
2. Dredge the chicken breasts in the flour mixture first, then the egg wash, and finally with the bread crumbs and parmesan.
3. In a large skillet over medium heat, melt 1 Tablespoon of the butter and 1 Tablespoon of the olive oil. Place two of the chicken breasts in the pan and cook for about 2-3 minutes per side, until browned and cooked through. Transfer to a rack and place in a 200 degree oven to keep warm. Melt the remaining butter in the remaining oil and cook the last 2 chicken breasts.

Arugula Double Down
1 cup arugula, washed
1 lemon, juiced
¼ t. kosher salt
1/8 t. freshly ground black pepper
2 chicken breasts, cooked as above
1 T. freshly grated Parmesan cheese
Combine the lemon juice, salt and pepper in a bowl. Slowly whisk in the olive oil until emulsified. Toss the arugula in the lemon vinaigrette and set aside.
Place the chicken breasts on top of each other and cut. Add the arugula to the chicken breasts as you would the filling of a sandwich. Sprinkle the parmesan on the salad and all over the sandwich. Adds 1g carbohydrate to the nutrition facts.
Marinara Double Down
2 T. of your favorite marinara sauce
¼ cup grated or sliced mozzarella or provolone cheese
2 chicken breasts, as cooked above
Top one of the chicken breasts with the marinara and the cheese. Add the other chicken breast and cut down the middle. Adds 5g carbohydrates to the nutrition facts.
