Stuffed Green Peppers | Diabetic Recipe

Here is a diabetic recipe beef dish that rivals the Roasted Peppers Stuffed with Yellow Squash and Rice vegetable dish. It comes from the “Fix-It and Forget-It Diabetic Cookbook” via Lois Stoltzfus from Honey Brook, Pennsylvania. This diabetic recipe is a simple, complete meal within itself and is easily done in the slow cooker. My whole entire family loves this diabetic recipe, INCLUDING…my 14 year old son who hates vegetables! Try this one out with your family and see what they think.

Ingredients

6 large green bell peppers

¾ lb. 85% lean ground beef, browned and drained

2 T. minced onion

1/8 t. Salt

1/8 t. Garlic Powder

2 cups cooked rice

15 oz. can tomato sauce

½ cup reduced fat shredded mozzarella cheese

Directions

1. Cut peppers in half and remove seeds.

2. Combine all ingredients except peppers and cheese.

3. Stuff peppers with ground beef mixture. Place in slow cooker.

4.Cover. Cook on Low 6-8 hours, or on high 3-4 hours. Sprinkle with cheese during last 30 minutes.
